2010年10月的第一鍋湯端出,也許很多人察覺不到,我們每天在調整比例跟追求超越,只因為那是我們認為對的事情,但卻讓我們更問心無愧,更驕傲的端出我們的一切。We made our first broth in Oct, 2010 and since then, we have been on a mission to use the freshest ingredients and pursue the perfect ratios to consistently make the tastiest broth. With no negotiation, our restaurant only opens only when the broth passes our standard and can be proudly served to our customers.
湯 Broth
製湯職人,即便是那一點的失誤都不允許!
Making the perfect broth was a difficult endeavor to undertake for our master chef. Now, that we’ve mastered it, we won’t allow any compromise in perfection!
選用稀少的牛膝關節熬湯、調製於純天然的南極海鹽、上品越南桂枝提味⋯,除了用最好的食材及費時熬製,我們注意到更重要的細節。煮好的湯放涼冷藏,這過程會花上好幾小時,然而放涼的過程中若稍微失誤,再上乘的湯也會因此變質;CYCLO採用食品急速冷卻技術,讓牛湯和牛肉能迅速冷卻再放入冷凍庫,在最短的時間內,鎖住所有熬製後的精華原味,確保每一碗端出的洛城牛肉粉都能擁有最佳品質!Our broth uses the freshest ingredients. Every care is put into each step in the broth making process. Traditionally, the soup cooling process easily takes several hours to complete, and it’s normally done at the room temperature. With any unexpected variances, broth can decay in just any minutes. To ensure our quality, CYCLO has adopted the newest modern rapid cooling technology to minimize the process time. Freshly prepared beef coupled with the broth undergoes a rapid cooling process in our sterile and dust- free production before transferred to refrigeration chamber. Care must be placed in every single step so that unintended impure flavor isn’t introduced into the broth. By doing so, CYCLO guarantees that every bowl is at its very best.
米 Pho/vermicelli
究極河粉,遵循古法挑戰老師傅的不可能!

嘗試了來自美國、中國、泰國、越南甚至台灣本地的河粉,CYCLO歷經近一年時間,與台灣米粉大廠、中華穀物研究所共同合作研發,推出『最適合清燉湯頭的熟河粉』,精選台灣米種、最新研磨設備 、碾米水質控管、採用天然原物料、傳承古作河粉工法製成,絕對不摻防腐劑及危害人體添加物。全程高溫蒸煮,成品製成後-18度急凍保鮮,只需要放入滾水約1分鐘河粉散開即可起鍋。我們堅信完美的牛肉河粉,就應該擁有優雅米香、Q彈滑順而不易軟爛的熟河粉!The CYCLO team sampled numerous vermicelli from different regions around the world - US, China, Thailand, Vietnam and Taiwan just to name a few. Not happy with the low quality of vermicelli available, our master chef ended up spending over one year working closely with local Taiwanese vermicelli makers and China Grain Products Research Development Institute in development of the most suitable vermicelli for our broth. CYCLO strictly control the components of our production by using ed local sourced natural ingredients (No Preservatives or Artificial Addictives), filtered water and the highest grinding genecology. Our Vermicelli is steamed with high heat and flash-freeze to preserve at -18 degree Celsius. So you get the freshest and tastiest vermicelli cooked in under one minutes!

為了食品安全,為了每一道端出去的品質,CYCLO洛城設立了比IS22000和HACCP更嚴格的中央廚房,甚至與中華電信雲端監控合作,拍攝QR CODE會連接到中央廚房的攝影機,未來並會與原物料產地配合連結,讓消費者能夠真正看到所吃到的安全。In order to ensure food safety and consistent food quality, CYCLO has set up a central kitchen in accordance to the standard of IS22000 and HACCP. Furthermore, Hi-Cloud technology from Chunghwa Telecom will soon be utilized to connect customers to our Live cameras located in our central kitchen through online QR CODE scanning. In the near future, the same concept will be introduced to our material suppliers in seeking of bigger and stronger food safe network, promoting transparency and welcome all our customers to visit our kitchen! Where our food is made with quality and trust.
